Grilled fish with oriental rice and date sauce

Time Taken : 30-45 mins

Ingredients:
180 gms. any kind of baby fish
1 tbsp. lemon juice
Salt and pepper to taste

For stuffed baby marrow:
2 small baby marrows, cored
2 tbsp. olive oil
2 tbsp. each, chopped onion and tomato
1 tbsp. each, chopped garlic, carrot and eggplant
Salt and pepper to taste
1 tsp. cumin


For date sauce:
1 cup cubed tomato
1 tbsp. tomato paste
1 tbsp. chopped onion
1 tbsp. chopped garlic
2 tbsp. olive oil
1/2 cup dates
1 cup fish stock


For Oriental Rice:

1 cup basmati rice, pre-soaked
200 gms. lamb, minced
Salt and pepper, to taste
1 tsp. cumin powder
2 tbsp. each, chopped onion and ghee (clarified butter)
2 cups chicken stock



Method


Marinate fish with lemon juice, salt and pepper for 30 mins.
Grill till cooked through and keep aside.
Stuffed baby marrow:

Heat oil in a frying pan and sauté all the ingredients together till done.
Let it cool and stuff the baby marrow with the cooked mixture.
Bake in a pre-heated oven at 180 degC for 15 mins. Keep aside.
Date sauce:

Heat oil in a pan.
Add onion and garlic. Saute.
Add tomato cubes and paste.
Cook for a few minutes.
Add fish stock and cook till the liquid reduces.
Add dates and cook for a few more minutes.
Blend and check for seasoning. Keep aside.
For the Oriental Rice:

Heat ghee in a saucepan and sauté onion till golden brown.
Add mince and seasoning.
Cook for five minutes.
Stir in spices followed by stock.
Add pre-soaked rice and cook till tender.
To serve: Layer grilled fish and Oriental rice alongside stuffed baby marrow and pour date sauce over.
